Mix 2 ½ cups all-purpose flour and 1 teaspoon salt, then cut in 1 cup chilled unsalted butter until the mixture resembles coarse crumbs, gradually add 6-8 tablespoons ice water until dough forms, divide into disks and refrigerate for 1 hour; toss 6 cups peeled, cored, and sliced apples with 1 cup granulated sugar, ½ cup packed brown sugar, 1 teaspoon ground cinnamon, ¼ teaspoon ground nutmeg, ¼ teaspoon ground cloves, 2 tablespoons all-purpose flour, and 1 tablespoon lemon juice, roll out the dough, place it in a pie dish, fill with apple mixture, dot with 2 tablespoons unsalted butter, cover with another rolled-out dough, seal the edges, cut slits on top, brush with 1 beaten egg, sprinkle with 1 tablespoon granulated sugar, bake at 425°F (220°C) for 15 minutes, reduce to 375°F (190°C), and bake for 40-45 minutes until golden brown and bubbly, cool for 2 hours before serving.
